Say goodbye to your diet with the best almond croissants you'll ever have! These quick and easy croissants, made with store-bought pastries and a delectable almond filling, are perfect for a luxurious breakfast or an indulgent snack.

Ingredients

  • 4 large store-bought croissants
  • Icing sugar for dusting

Filling

  • 80g butter
  • 60g icing sugar
  • 1 egg
  • 80g ground almonds or almond meal
  • 30ml cake flour
  • 2.5ml almond essence
  • Seeds from 1 vanilla pod
  • 30g flaked almonds
  • 20g chopped almonds

Method

  1. Preheat Oven: Preheat your oven to 180°C.
  2. Prepare the Filling: Cream together the butter and icing sugar, then beat in the egg. Add the ground almonds, cake flour, almond essence, and vanilla seeds to make a smooth almond paste.
  3. Assemble the Croissants: Gently cut the croissants in half and spread some of the almond filling inside each one. Place the croissants on a baking tray and spread additional filling on top.
  4. Add Almonds and Bake: Sprinkle with flaked and chopped almonds. Bake for about 15 minutes or until the croissants are golden brown.
  5. Serve: Dust with icing sugar and serve immediately.
