Rosemary Roasted Almonds

Ideal to pair with a glass of wine or snack between meals, these rosemary roasted almonds are irresistibly savoury and sweet. Perfect for entertaining or a quick, satisfying bite.

Ingredients

  • 500 g raw almonds
  • Handful rosemary leaves, chopped
  • 25 ml olive oil
  • 50 ml fine salt
  • 60 ml brown sugar

Method

  1. Heat the olive oil in a frying pan on medium heat and add the almonds. Fry the almonds until golden brown, stirring constantly.
  2. Add the salt and rosemary and cook for another few minutes.
  3. Remove from the heat and add the sugar. Stir very well until the sugar is absorbed by the nuts.
  4. Cool down completely before serving.

Store in an airtight container for a few days.
