Oven Roasted Mediterranean Chicken Pieces with Almonds

Ingredients
- 4 chicken thighs
- 4 chicken drumsticks
- Salt and milled pepper
- 15ml ground cinnamon
- 2 onions, sliced
- 1 clove garlic, roughly chopped
- 10ml grated fresh ginger
- 1 kg baby tomatoes, halved
- 30ml honey
- 45ml The Almond Girl Extra Virgin olive oil
- 125ml The Almond Girl nonpareil almonds
- Handful of coriander leaves, to serve
- 6 toasted flatbreads, to serve
Method
- Preheat the Oven:
- Preheat your oven to 180°C.
- Prepare the Chicken:
- Place the chicken thighs and drumsticks in a large roasting tray.
- Season generously with salt and milled pepper.
- Sprinkle with ground cinnamon and toss to coat evenly.
- Add Aromatics and Vegetables:
- Add the sliced onions, chopped garlic, grated ginger, and halved baby tomatoes to the tray.
- Drizzle and Roast:
- Drizzle the mixture with honey and olive oil.
- Cover the tray with foil and roast in the oven for 45 minutes.
- Add Almonds and Finish Roasting:
- Remove the foil and sprinkle the nonpareil almonds over the chicken.
- Return the tray to the oven and roast for an additional 15 minutes, or until the almonds are toasted and the chicken skin is crisp.
- Serve:
- Sprinkle with fresh coriander leaves.
- Serve with toasted flatbreads.
