Oven Roasted Mediterranean Chicken Pieces with Almonds

Elevate your chicken dinner with this Oven Roasted Mediterranean Chicken recipe. Infused with warm spices and complemented by a toasted almond crunch, this dish is perfect for a delicious family meal.

Ingredients

  • 4 chicken thighs
  • 4 chicken drumsticks
  • Salt and milled pepper
  • 15ml ground cinnamon
  • 2 onions, sliced
  • 1 clove garlic, roughly chopped
  • 10ml grated fresh ginger
  • 1 kg baby tomatoes, halved
  • 30ml honey
  • 45ml The Almond Girl Extra Virgin olive oil
  • 125ml The Almond Girl nonpareil almonds
  • Handful of coriander leaves, to serve
  • 6 toasted flatbreads, to serve

Method

  1. Preheat the Oven:
    • Preheat your oven to 180°C.
  2. Prepare the Chicken:
    • Place the chicken thighs and drumsticks in a large roasting tray.
    • Season generously with salt and milled pepper.
    • Sprinkle with ground cinnamon and toss to coat evenly.
  3. Add Aromatics and Vegetables:
    • Add the sliced onions, chopped garlic, grated ginger, and halved baby tomatoes to the tray.
  4. Drizzle and Roast:
    • Drizzle the mixture with honey and olive oil.
    • Cover the tray with foil and roast in the oven for 45 minutes.
  5. Add Almonds and Finish Roasting:
    • Remove the foil and sprinkle the nonpareil almonds over the chicken.
    • Return the tray to the oven and roast for an additional 15 minutes, or until the almonds are toasted and the chicken skin is crisp.
  6. Serve:
    • Sprinkle with fresh coriander leaves.
    • Serve with toasted flatbreads.
