Beef Fillet with Charred Peppers and Almond Sauce

This dish combines tender beef fillet, perfectly charred peppers, and a zesty almond sauce, creating a harmonious blend of flavours that will impress your guests. Ideal for a sophisticated dinner, this recipe showcases the rich taste of beef complemented by fresh herbs and a nutty, citrus-infused sauce.
Ingredients
Beef Fillet and Peppers:
- 800g beef fillet, trimmed
- 3 garlic cloves
- 1 lemon, zested and juiced
- Fresh thyme
- 45 ml olive oil
- 2 red peppers, seeded and cut into quarters
- 1 yellow pepper, seeded and cut into quarters
Almond Sauce:
- 80 ml olive oil
- 100 g almonds
- 1 lemon, zested and juiced
- 15 ml honey
- Zest of 1 small orange
- Fresh mint leaves
- Salt and black pepper
For Serving:
- Fresh wild rocket and baby salad leaves for plating
- Fresh mint for serving
- 30 g parmesan or pecorino cheese for shavings
Method
- Marinate the Beef:
- Combine garlic, lemon zest and juice, olive oil, thyme, salt, and black pepper to make the marinade.
- Place the beef in a zip lock bag, add the marinade, and refrigerate overnight.
- Prepare the Almond Sauce:
- Heat 30 ml olive oil in a frying pan, add almonds and some salt, stirring until golden-brown. Cool and roughly chop the nuts.
- Mix in the lemon zest and juice, honey, orange zest, remaining olive oil, 2.5 ml salt, and black pepper. Set aside.
- Cook the Beef and Peppers:
- Preheat the oven to 200°C and heat a griddle pan on medium heat.
- Remove beef from the marinade and brown evenly on the griddle pan.
- Transfer the beef to a roasting pan and roast for 15 minutes or until desired doneness. Cover with foil and let rest for 10 minutes.
- Brush pepper quarters with olive oil, season, and char on the griddle pan. Transfer to a roasting dish and roast for 10 minutes.
- Serve:
- Slice the beef into 1 cm thick slices.
- Arrange on a serving dish with wild rocket, baby salad leaves, and chargrilled peppers.
- Add fresh mint and drizzle most of the almond sauce over the dish. Serve the remaining sauce on the side.
- Sprinkle parmesan shavings over the top.
