Almond Joy Cookies

Ingredients
- 200 g butter
- 150 g castor sugar
- 160 g brown sugar
- 2 eggs
- 5 ml vanilla
- 300 g flour
- 5 ml bicarbonate of soda
- 2.5 ml salt
- 400 g chocolate chips
- 120 g coconut
- 150 g chopped almonds
Method
- Preheat the Oven:
- Preheat the oven to 180°C and line 2 greased baking trays with baking paper.
- Cream the Butter and Sugars:
- In a large bowl, cream together the butter, castor sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then add the vanilla extract and mix well.
- Prepare Dry Ingredients:
- Sift together the flour, bicarbonate of soda, and salt in a separate bowl.
- Add the chocolate chips, coconut, and chopped almonds to the flour mixture and stir to combine.
- Combine Mixtures:
- Gradually add the dry ingredients to the butter mixture, mixing until just combined to form the dough.
- Shape the Cookies:
- Scoop out tablespoons of the dough, roll into balls, and place on the prepared baking trays. Press down lightly to flatten.
- Bake:
- Bake in the preheated oven for 8-10 minutes, or until the cookies are slightly golden brown around the edges.
- Allow the cookies to cool on the baking tray for 5 minutes before transferring them to a cooling rack to cool completely.
- Store:
- Once completely cool, store the cookies in an airtight container for up to a week.
