Almond and Dried Apricot Bites
Perfect On-the-Go Energy Snacks
Ideal for hiking, road trips, or a quick post-run boost, these almond and dried apricot bites are packed with wholesome ingredients to keep you fuelled and satisfied. Swap the apricots for dates or dried pears to suit your taste preferences.
Ingredients
- 80g The Almond Girl nonpareil almonds
- 160g dried apricots
- 30g medium desiccated coconut
- 45ml honey
- 5ml cinnamon
- Pinch of salt
Method
- Prepare Almonds:
- Place almonds in a food processor and process until finely ground. Reserve 45ml for later use.
- Combine Ingredients:
- Add dried apricots, coconut, honey, cinnamon, and a pinch of salt to the food processor with the ground almonds. Process until well combined and sticky.
- Check Consistency:
- Ensure the mixture is moist enough to roll into balls. If needed, pulse a bit more until desired consistency is achieved.
- Shape into Balls:
- Using a tablespoon, scoop mixture and roll into balls between your palms.
- Coat with Almond Flour:
- Roll each ball in the reserved almond flour to coat evenly.
- Store and Serve:
- Place the almond and dried apricot bites in an airtight container and store in the fridge.
Note:
These bites can be frozen for convenient future use.
